I have attempted to greatly simplify this process. I have an rsync directory setup which you can use to download the whole overlay. Just execute the following commands as root
mkdir -p /usr/local/overlays/ cd /usr/local/overlays/ rsync -rtv --delete ultra.hivalley.com::ifolder-overlay ifolder-overlay
Please save the last command as a script file called /usr/local/overlays/updateiFolder.sh to simplify the process in the future. To update to the latest versions just execute the updateiFolder.sh command.

Make sure that you add the following to /etc/make.conf.
PORTDIR_OVERLAY="/usr/local/overlays/ifolder-overlay"
You can still visit the gentoo ifolder ebuild page (http://bugs.gentoo.org/show_bug.cgi?id=64399) to download the ebuilds manually, but I do not plan on updating those in the future.
Note that most of these ebuilds are marked ~x86 so to install them you may need to add the packages listed to /etc/portage/package.keywords This can be done simply by:
echo "dev-dotnet/simias" >> /etc/portage/package.keywords
And repeating the process for each application necessary.

Install SimpleServer
Now for the fun part. Let's install the SimpleServer application. To install SimpleServer you only need to install the simias package with the simpleserver USE flag. You can add the simpleserver USE flag to /etc/make.conf or you can run the following command:
echo "dev-dotnet/simias simpleserver" >> /etc/portage/package.use
After you've added the USE flag, the next step is to emerge in simias and its dependencies.
emerge -av simias
Double check that the simpleserver USE flag is enabled and hit enter. It should go on installing all the dependencies mono, log4net, etc.
Configure SimpleServer
Next edit the config file in /etc/simias/SimpleServer.xml and add any users you'd like and tweak the server name and description if you'd like.
vi /etc/simias/SimpleServer.xml
Start SimpleServer
The latest ebuild includes an init script called ifolder which should be installed in /etc/init.d/ Run the following command to start the server.
/etc/init.d/ifolder start
This should start the server by initializing the db etc. If you'd like to have the server start automagically you can run
rc-update add ifolder default
Which will make the server startup on reboot.
Connect To The Server
With an iFolder client (some other box with iFolder installed) connect to the server by going through the connection wizard. When you are prompted to give the address of the server you need to remember that the server is running on port 8086. So you should type something like the following:
10.0.0.100:8086 ifolder.domaim.com:8086
